Cookies becoming too hard

How do you keep your cookies soft before you seal them? I decorate them and leave them to air dry but the cookie becomes hard before I can seal it! I tried putting them into airtight containers to dry and they stayed soft but the colors bleed. I have also tried many different cookie recipes to see if that was the problem and they all did the same thing.. too hard. If anyone has any suggestions i would appreciate it, or maybe its just me icon_smile.gif haha thank you so much!!

I underbake them for a minute or two.

I've found that the thinner the cookie, the harder it will become. Also I go by how they look, not the time recommended because it's easy to overbake a cookie by a little and have it turn out crispy versus soft.. although some people prefer it crispy

Sugar cookies are meant to be hard.  They are not stale by any means, in fact, when they become stale they soften.

Ok thank you! I will try to bake them a little less next time. I'm hoping I can find a solution because I do not like super hard cookies!
