Hi everyone.

I want to open a cupcake business this month but i have a question that i need answered in case in run into this in the future.

1) Say i have two events to deliver cupcakes to in the same day but the customers want their order to be delivered by the same time or around the same time. if I'm setting up the cupcakes for both events, what do i do to make sure both orders are on time?

2) I want to start using Swiss Meringue butter cream because its a lighter and less sweeter frosting then regular butter cream. How long would you say that kind of frosting can be out of the refrigerator? I was thinking about using Swiss Meringue butter cream when i help out with community fund raisers too,but i don't know how the butter cream will hold when it is hot outside. grant it i do plan on having then under a tent.

3) Does anyone know the best way to carry butter cream frosting when your on a delivery?? I would like to always carry an emergency kit with me in case something goes wrong. I know you cant put butter cream frosting on ice because it will get hard. Is there a kit already made for that? if not, what should i do?

                                                               thank you for your help

Unless you are going to hire someone to help deliver, you just simply can't be in two places at once.  Whomever you signed up with first should get the preferred delivery time and the second order taken will have to work around the first scheduled delivery.  As for the emergency BC question, just grab a bag of icing and the tips you might need and bring it along.  The completed cuppies aren't being refrigerated, why should the touchup bag need to be?

If it's just going to be you as is the case with the business I'm trying to start, you can't be in two places at once. Unless there is going to be someone to help you with deliveries the first order will get the time they want and the second order will have to take a later time after the first order. As to how to maintain cupcakes in heat, i would have a cooler or something to keep the frosting in. an option might be to have all the cupcakes baked and unfrosted and have the frosting in a pastry bag in a cooler to keep it from melting and frost cupcakes as needed or when you get to your venue.
