I am making a3 tiered cake with swirl roses all over it.
My question is, how soon can I make the cake? And I have to refrigerate it after right?
I'm just not too sure of the whole process.

Yes, you should keep your cakes chilled all the time until it is time nearly time to deliver.  Take it out a little before you want to deliver them.

You can make them a few days ahead any more than that I would freeze them.

Refrigeration isn't necessary unless using perishable fillings/icing.
