I was hoping to make a topsy turvy wedding cake for my sister.  I looked on line to buy the pans in order to save me on the cutting stacking, and hoping that they will hold up better.

Can anyone advise me the best way to stack these so they can be easily transported?  Obviously in  a regular cake, there are supports in each level to hold up the next but a cake that is slanted; does there need to be an additional pole support through the whole thing?

I bake and decorate many cakes a week, but the reviews made me nervous; that it's hard to cover and stack; does anyone here find that problem?

Please help me out!

Thanks,

Sara

This 3 layer topsy turvy cake went 20 miles in an SUV with terrible shocks!  (I put the topper on at the site).  It is 12", 8" and 6"  Fat Daddio topsy turvy pans.  They worked very well, although I did carve in the sides to undercut a little more.  I found it surprisingly easy to cover in fondant,  no more difficult than any relatively tall round cake.  You are probably well aware that each layer is on a cardboard round and supported by straws, or dowels or some sort of support system.  Also each cake is actually level, sitting in a cut out in the cake below.  Lots of youtube tutorials.  I sharpened a dowel and hammered it down through the whole thing for transporting, (Don't use plastic separator plates unless there is a hole in the middle!)  and pulled it out at the venue.  The topper covered the hole.  I am far less experienced than you are, so I have no doubt you can do it!
