Tall Cake

Hi y'all, I've been in the cake business for a couple of years but I've never done a TALL cake. 

The cake the customer wants is something like this one, without the big base

...so my question is how can I stack a cake that's taller than me?

If I understand you correctly. Then its the same as stacking any cake. Dowels, cake board, seperator, cake, dowels cake board, seperator.

 

If you're saying "taller than you" then you just need a step to stand on whilst you stack. And of course stack on site.
