AHow can I fix a cake that I covered in fondant and piped then added chocolate covered strawberries but now the strawberries are bleeding into the cake.

Oh, I'm sorry that happened.  How much time do you have until you give the cake to your customer?

I would take the strawberries off the cake.  Dab as much juice off the fondant as you possibly can.  Dry well.  Maybe when it's dry you can go over the pink spots with some super white color gel.  I would do a test spot first.

If you can I would re-do the strawberries.  They probably leaked because they weren't dry enough.

Remember, fondant cakes don't go in the fridge.  The strawberries should be put on the cake at the very last minute.

I know that's not the answer you want to hear but I'm not sure there is an easy fix short of pulling off the fondant and doing it all over again.

good luck!

AUse a paint brush & a dab of water to clear up the streaks.

Fondant cakes can be refrigerated. I do it all the time. However, strawberries are a delicate thin & should be placed last minute. They have to be very dry before dipping.

You could try some cornstrach to absord some of the juice and brush off the extra. Might help hide the red streaks also.

I use MMF and always keep them in the fridge. Helps the mmf set up, I've never had a sweaty cake. :)

AThank you all! Sorry for the no response. I used water and a sponge brush and it came off quite easily. I did brush some white color on it and it came out beautifully! Thanks so much for all your help!!!

I know you've already got your answer, but somewhere on C.C. someone was talking about smudges, and it was recommended to use vodka to clean it off the fondant. I was skeptical, until I needed to clean up a smudge. The vodka worked great!
