Allergy free recipe help needed urgently pls!

Hi. I have been asked to make a choc birthday cake for my friends sister who's allergic to wheat, gluten, dairy, eggs and soya. On her advice I ave purchased -

White self raising flour which is gluten ad wheat free
Rice milk
Egg replacement powder
Sunflower based butter replacement.

I have never worked with these ingredients before and am struggling with a recipe. There is one listed on the pack of specialist flour but this requires mashed bananas which oddly enough I am severely allergic too so can't handle.

Can anyone recommend a choc cake recipe that doesn't contain bananas? Also to ready made flour mix I have bought contains xanthate gum, so do I still need to add this? Also some recipes I have found all for vinegar but does not state what type. I'm from uk and never seen a cake recipe with vinegar in before so sorry if that is a dumb question.

I have fairly limited experience of gluten free baking but if the flour mix already has the gum it I think it shouldn't require more.

 

I have used vinegar a few times in cake and it does work! It's to make acidity level right and get the baking soda to work like buttermilk normally would. I have just used normal white vinegar and by the time the cake is cooked there is no way of knowing what's in it.

 

I have done the Wacky Chocolate cake or Depression cake before for a friend who needs dairy, egg and soya free and it turns out nice. You could try that with the gluten free flour mix maybe and see how that turns out?

 

Be careful about crosscontimanation in your kitchen with baking gluten free.

You'll probably want to use flaxseed as an egg replacer, the egg replacement powder (typically potato starch) does not provide a very good texture for cakes.
