AI am trying to make a diabetic cake. I've tried twice and the cake won't rise. It just looks like a big thick pancake! What do I do to make it rise?!

Whisking the egg whites separate to the yolks and folding them in adds air. Adding baking powder as a rising agent.

 

I don't see the point in trying to make a diabetic cake. It's not all about sugar, it's the carbs in the flour too. You would be better off enjoying a small piece of good cake and factoring it into the daily allowance of carbs and sugar then making a diabetic cake which could taste awful. Just my opinion.

My sister is a nurse and she says that in the hospital Angel Food Cake is served to the diabetics... I am usually asked to make Angel Food Cake Cupcakes (sometimes with fruit in them) when a friend has a particular party since she has quite a few diabetics in the family...

ATry a recipe with almond meal. It won't be the same as a regular cake, but you can make a good-tasting dessert. Artificially Sweetened Cream cheese makes a decent icing.
