I have a co-worker who wants me to do a cake for her friend's graduation. Unfortunately I am going to be out of town from Wednesday through Sunday. She wants the cake for Monday. She has asked if she can pick up the cake on the Wednesday before Monday and will it still be fresh for Monday? It is covered in fondant with buttercream filling with 24 cupcakes also.
Just wondering your opinions on this matter. What would you do? Thank you for your help.
If she has the room, she can freeze the completed cake and then defrost it for the celebration.
Box the finished, decorated cake. Wrap the box in some plastic wrap and aluminum foil. Freeze it until the day before the party. Put the wrapped box in the refrigerator overnight and then on the counter until a couple of hours before the party starts. When taken out of the box, the cake should be just fine with little to no condensation (sweating).
I also agree. I did this one time with a fondant covered cake with a large bow on top. I also put it in a big trash bag after wrapping in foil and saran wrap of course. Taped the whole thing really well. The cake was fine and the bow was too!
