AThe recipe I'm using calls for 2 sticks of butter, but I don't want to use that much! The recipe uses a 1:1 ratio so I think 1 stick should be enough..but maybe not. I'll use the rose swirl (inside then swirling out) so I probably won't use that much butter. Help?

Well, the cold-process BC recipe that's been on the back of the C&H powdered sugar box since before most of us were born easily covers a 9x13 single-layer sheet cake, or a 9" round layer cake, with frosting to spare, and it only uses one stick. Of course, it all depends on how much frosting you put on a cupcake.

One batch of frosting should be enough to cover 24 cupcakes!! But these days, the way people pipe these high piles of frosting on, maybe not.. Make 2 batches just in case. You can always freeze it !
