Gluten And Sugar Free Advice Needed......

I have been for quite sometime now trying to bake sugar free. I have followed recipes to the T, researched all kinds of advice, done quite a few tricks and tips. Nothing has worked... The cakes are hard as rock, flat as pancakes.... They taste good! But, nothing is making them rise or fluffy...

 

I have gotten to the point to where they are not rock hard and at least edible now.

 

Recently, I have been trying out gluten free change and to find things that are gluten and sugar free is like finding a needle in a hay stack!!!

 

I have been playing around with making Mug cakes, just to get something going, also so I don't waste a lot of materials.

 

I have found quite a few recipes, even tried mixing a couple together to get both sugar and gluten free.. So far.... well.... instead of rocks,  I get rubber....

 

This last attempt I made.. I created my own flour mix because I've been reading that what I've been using most likely had way to much protein in it. I got the texture of a cake, the taste is pretty good, however, still can't seem to make it rise like a cake is suppose to.

 

I have people that keep telling me I should go to the baking section in the stores and ask for advice, but most of them don't even make sugar free cakes. Least around here they don't.. so I'm not sure what kind of advice they can give me with both gluten and sugar free.

 

I know it can be done because there are recipes out there. I follow those recipes 100% and it still never seems to work for me. I have finally got the texture down..... sorta.....  just can't seem to make the cakes rise, they are always flat as pancakes! Even the Mug cakes don't rise and there's not much to making those... :(

 

 

 

Any advice, resources, books, anything!!! Will be greatly appreciated!!!

Never mind, after some tweeking and experimenting today, think I got it figured out. icon_biggrin.gif

 

Plus after reading some previous threads on here I understand how everyone here feels about this concept.... 

 

I am sorry to have taken up space and time on these forums...
