I Have The Problem Of Fondant And Gum Paste!

=Problem one=
I live in Hong Kong, the weather of HK is very moist recently.
Today, moisture content is 99%.
On Monday, i made the fondant "baby", keep it in Elecotronic Dry Cabinet until now, it is very good.
Yesterday, i made the body of "father", it is set, keep it in Elecotronic Dry Cabinet, it is very good.
However, i made the head of "father" today, i finished the work and keep "father" in Elecotronic Dry Cabinet.
The body appear crack ><"
But the head is only "DRY" not "SET"
Moisture content of Elecotronic Dry Cabinet is 50%.
= Problem two=
I bought gum-tex of wilton. I made the gum-paste at home.
Following this recipe:
3 CUPS icing (i used 360g)
2 tsp GUM-TEX
1/4 CUPS water (i used 60ML)
2 tbsp corn syrup
For knead after 8hrs
1 CUP icing (i used 120g)
1/3 CUP starch (i used 40g)
I follow above recipe totally.
But, the texture a little sticky.
when i roll it, i use some icing sugar.
I know gum paste is set quickly. But my gum paste not.
I keep it in Elecotronic Dry Cabinet!
It is CUT!!!!!!!!!!!

we have high humidity here but we operate in air conditioning so i've never had a serious problem with anything setting up for me--i would suggest kneading in more corn starch if this was happening to me

It is cut。 It means i rolled gum paste for write the HAPPY BIRTHDAY,but it is fracture when it keep in dry box.
Is it the recipe is not real?
unfortunately i don't know--i don't use that recipe
i usually use gum paste mix http://sweetwise.com/ck-gum-paste-mix.html
or i use fondant that i added additional cornstarch to--for example to one pound of fondant i would add 1/4 cup to 1/3 cup of cornstarch
also sometimes i add tylose to store bought pre-made satin ice fondant to make gum paste http://sweetwise.com/catalogsearch/result?q=tylose
i'm not sure if sweetwise ships overseas but those are the types of products i use with great results
i checked global sugar arts and they did not have gum paste mix available
and so yes i think you definitely need to tweak something in your recipe but i'm not sure what--i would add more cornstarch as a test to see how that would work
if you have any leftover i'd take a small portion and test it with additional cornstarch
additional powdered sugar is more of a liquifier in this case
and i'm sorry your creations cracked
