Diabetic Cake recipe anyone??? (sugar free and whole wheat flour only)

Help!! I was asked to bake a cake for a baby shower, the pregnant lady in diabetic and cannot eat sugar and can only eat whole wheat flour! I am freaking out because I have no experience baking a cake with this requirement! Please if you have a recipe you could share with me I will be thankful!!

If you Google Diabetic whole wheat cake recipes you should find something that will work.  Many are carrot cakes and Gold Medal flour makes a white whole wheat flour (I've never looked for it so I don't know if all stores will carry it).    It's a start :)

There are a few brands of "white whole wheat" flour. Also try a bulk food or health food store for "whole wheat pastry flour" which is very similar.

 

You can also make a cake with no wheat flour at all using nut flour.  Google "european nut spongecake"  there are variations using almonds, hazelnuts, etc and some have cocoa added.

 

Spongecakes also use much less sugar than creamed cakes.

 

I can't advise you on a sugar substitute that bakes the same as regular sugar.  But spongecake is a lot more adaptable because the eggs do the hard work instead of the sugar.

white lily brand white flour is all wheat

 

most all purpose has malted barley flour added to enhance browning

 

however usually people mean brown whole wheat with the germ in it when they say whole wheat flour

my cookies are prettier than your cookies because this is the second time i substituted my opalescent sanding sugar when i ran out of sugar to make the batch ha!

I'm going to have to try this recipe!  Any thoughts on how it would work with soft white wheat(home ground) and stevia?  I was also thinking it could go well with almond flour.  Sorry just rambling a bit.  Got a birthday party coming up for a friend with diabetes.

you might want to google some Paleo cake recipes.  They use alternative flours and will be lower carb than a wheat flour.  They will have some sugar in them, but because of the reduction of wheat carbs it is still has a lower impact.

Instead of making you can buy a readymade also. there are sugar free cakes available in the marker.
