I just wish I could say to whoever invented MMF....I love you!!! I can't get over how fast it is to make!!! icon_eek.gif I was prepared for some long, drawn out thing, but no...it took me all of about 7 minutes, from greasing my bowls, sifting my pwd sugar, melting and stirring the marshmallows, and mixing it all up, then wrapping it to let it cool. 7 minutes!!! I even made and ate a piece of peanut butter toast for breakfast while the marshmallows were melting in the microwave!!! lol icon_rolleyes.gif I timed it because I was wanting to see if it was worth the time it took compared to just buying it in a tub or something. I didn't include the time it takes to knead it, roll it and get it workable for cutting out and making shapes, etc. because you have to do the same thing if you buy the stuff anyway. But I say....It's DEFINITELY worth it...and it tastes pretty good too, for a big blob of play-doh sugar! lol icon_lol.gif I used orange extract for the flavoring, so it's pretty light. I have only one minor thing that I'm not happy with....it's not as white as the pre-made brands. icon_sad.gif But I'm only using it for daisies, and that little bit of off-white color will be fine in this case. thumbs_up.gif

I love mmf too! It's so much fun! Not sure why you're mmf isn't ultra-white. The marshmallows here in Indiana are very, very white. icon_wink.gif

I hated rolling out my MMF but I have to agree that making it was so easy. I just found that it was really hard to roll out without it sticking to the counter. I was planning on using rolled fondant instead of MMF for another cake I'll be doing soon but seeing you so happy Jenn makes me want to try it again!!!!

Daniela - did you try using a little Crisco on the counter and/or on your hands. What a world of difference this makes thumbs_up.gif

Now you ladies have really got me thinking!!!!!!!!!! I really want to try the MMF again but I'm scared that it won't turn out good. I'm such a chicken!!!!!!!!

I think I may have figured out my problem!!!!!!!!!!!Well the recipe listed on this site says that you need 16oz of marshmellows which is 2 cups right!!!!! well 2 cups is 454 grams which is a full bag of marshmellows!!!! I just measured 2 cups and didn't think that I might need the entire bag!!! I wasn't thinking I guess icon_redface.gif


BTW does anyone know how many cups are in 2 pounds?? I just want to make sure before I make another mistake. icon_lol.gif

8 ounces is one cup; 2 cups is 16 ounces which is one pound icon_smile.gif

Thanks ntertayneme that's what I thought too. The first time I made MMF I added what the recipe asked which was 8 cups of PS. It wasn't until today that I realized that 2lbs is 4 cups not 8!!!! icon_redface.gif

I have a problem with it not rolling out. It is coming out gummy.. icon_confused.gif Any idea why?? My MMF is so stretchy and when I roll it out sometimes it seems to just spring back to what I started with.. icon_cry.gificon_cry.gificon_cry.gif

just do it.............i love to make it ... sooo much fun the key is not too much suger and not to little just right....so until you figure out what works for you just add a cup at a time

I just used one bag of marshmallows and one bag of pwd sugar. I did like the recipe/instructions posted here said....put 1/2 of the pwd sugar in a bowl and make a well in the center. Poured in the marshmallows and then I just sort of folded the pwd sugar over into/onto the marshmallows...kept folding until most of it was combined, then I dumped in the rest of the pwd sugar and folded until it got too thick....then just used my hands to work it together. If it wouldn't blend well I just sprinkled it with some water until it started working better.

However, I would recommend using crisco on your surface where you're going to roll it out....not cornstarch, as the recipe calls for. The cornstarch just kept sticking to the MMF on the surface and didn't get worked into it as I was rolling....So I cleaned off my table top and just rubbed a little crisco on it and just a tad on my hands too....then it rolled out perfectly. It did dry out a little bit whlie it cooled, but the crisco on my hands and the table brought it right back to a good consitency. I cut out all my flowers, put them in an egg carton to dry, then added some yellow coloring to a chunk of it, kneaded it in and made little balls for the centers of the flowers. Found a great new trick, too! I used Glad Press n Seal, laid it on top of the ball and gently rubbed it all over. It's got a tiny little pattern to it that I thought would look neat on the centers and sort of resemble what they really look like. It's drying right now....let's hope it works!! icon_rolleyes.gif

I've always used cornstarch with no problems... I have had problems with Crisco sticking.. so I think it's up to the individual for whatever works for them...

that is so crazy....I wonder if the temp of your surface & house and maybe the humidity level in your house has something to do with it? It seems to have something to do with every other aspect of cake baking & decorating...at least with me!!! lol icon_lol.gificon_rolleyes.gif

Daniela--

Marshmallows, like other dry ingredients, are sold by weight, not volume. A cup is 8 FLUID ounces. 1 cup of marshmallows is not 8 ounces! I know that can be confusing. When the recipe says to use 16 oz marshmallows, it is referring to weight, not volume, so it will be more than 2 cups.

When a recipe calls for using a certain number of ounces of a wet ingredient, that's when you can count on 8 oz being equal to one cup, but it is not so with dry ingredients.

Here's another way to look at it:

Dry ingredients are measured in weight ounces. The number of ounces per cup of a dry ingredient depends on how dense the dry ingredient is. A cup of granulated sugar, for instance, weighs about 7 ounces. A cup of mini marshmallows weighs about 2 1/2 ounces.

Wet ingredients are measured in fluid ounces. There are always 8 fluid ounces in a cup.

the bottom of my bag of marshmallows said the oz's - i believe it was just the whole bag to 2lbs of sugar. i hate measuring if i can get away with it so i buy the sugar by the box in 1lb boxes. so my MMF was easy - one box of sugar in big greased bowl, melt marshmallows with flavoring, pour in and mix with in the big bowl with spoon. then start to pour in 2nd box of sugar, little bit at a time till i got to kneading consistency.

my 1st time trying MMF i just dumped in 2lbs of the sugar and it was way too stiff...like this way better and can knead in more and more till the consistency is right. hth!

Yeah-- I don't want anyone to think you have to weigh your dry ingredients! I just was trying to explain why you have to be careful about confusing fluid ounces and weight ounces.

I just use the whole 16 oz. bag of marshmallows, too! It's easiest that way.

Well, I had bought my ingredients for the MMF earlier in the week and was planning on making today. And then I get on here and see you gals having a good time with it.....so I can't wait! I will have to post how mine turns out too!

I found a trick with MMF. I bought some thin vinyl and roll my MMF on it. It usually does not stick to it at all. I did have a problem once when I covered at 16 inc square cake because it was so big. But just a small sprinkle of corn starch fixed that. It also is nice because you can roll it right off the vinal, and you can pick it up and see the bottom of the MMF to determin which side is smoother. I love it and won't roll out my MMF without it. It is very inexpensive and you can get it at any fabric store. Keli

Well I made a batch of MMF this afternoon and I LOVE it. It was so easy to mix, I didn't even use my KA I just mixed it by hand adding half the sugar to the melted marshmallows then slowly adding the rest. I played with it all afternoon , trying different flowers etc. It is like having edible playdoh..LOL. I'm sure kids would love playing with this stuff.. My only problem was trying not to eat it all..It tastes great..Now I will have to make a cake to put all my MMF flowers on. How long can I keep these flowers.. I have them drying on parchment paper now.. The unused MMF I have wrapped in saranwrap and in zip loc bags.. How long can I keep that?

Here are my first attempts at making fondant flowers.. I don't have any flower cutters so just rolled the MMF into litttle balls and flattened them into a flower shape.. I loved working with the MMF and am going to look for some fondant cutters and a few books on gumpaste , fondant flower making..Last week when I was at the bulkbarn.. I was looking at the fondant in a little tub..It was around 14.00 and I wasn't sure I'd like working with it so I didn't buy it.. MMF is so much cheaper and it is so easy to work with.. Not having ever worked with purchased fondant I can't compare the two but I am happy with the way these turned out for my first attempt. Now I have to put them on a cake before I end up eating them. icon_smile.gif

Your flowers turned out great! I love the colors! Quick question: did you have any trouble kneading the color into the MMF? I've heard other people talking about problems with that...

Thanks dandelion. No I didn't have any trouble at all. I used the wilton paste colors , cuz that's all I have and they were really easy to blend into the MMF. I just kneaded the colors in with my hands{ with gloves so I didn't end up with pink and green hands}.If I found it was getting a little sticky I added a tiny bit more icing sugar.. I also put a tiny bit of crisco on my hands when working with the MMF .

Oh one other thing is that I didnt use all the 1KG bag of icing sugar.. I added half of it at first into the melted marshmallow mix , then slowly added the rest.. but didnt use it all , maybe a cup or so left in the bag. I stopped adding when I liked the texture..
