I just joined this community a few hours ago, hope im posting my question in the right place. I live in a very hot region, with temperatures up to 40 degrees C. IMBC is my favorite frosting and thats what i use for my cupcakes, but someone wants to travel with them and im worried they wont survive the heat so im thinking to add some icing sugar to help the frosting hold. Can i do that??? If not can someone please suggest an equally yummy frosting that holds up to heat? Please help
Yes you can add icing sugar to IMBC. I think it can help make it stable but will also make it sweeter. Most people like IMBC because its not too sweet. What I like to do is add hgh ratio shortening to make it more stable in high temps. This type of shortening does not leave a greasy feel in your mouth and won't affect the flavor of your frosting.
I agree that using a Hi-ratio shortening will aid in your warm weather stability much more than adding powder sugar. I have done this on a 3:1 ratio with the majority being butter with a nice result. I use the powder sugar as a flavor enhancer in certain situations when I want a sweeter buttercream.
