I am making a three-tiered cake this weekend.  My customer is picking up the cake as she's transporting it a long distance.  I don't usually transport assembled tiers, so I've never put one dowel rod through the center of all three tiers.  I will, of course, put it in this cake since it's being transported such a long distance.  Can anyone advise me on how to tell her to locate and remove this dowel rod?  I can tell her where I placed it, but do you recommend I have her cut the top tier and when she gets near the dowel rod, then remove it?  Or should I have her locate it from the start, remove it and then start cutting?  The cakes are three different flavors, so I would normally have her disassemble the tiered construction and remove the dowels from the bottom tiers before cutting so that guests can have their choice of flavors.  Thoughts or suggestions please?

I have all my customers travel with center dowel.   I tell the customer how the center dowel has been inserted in the cake (through all tiers and through the bottom board).   I tell them to cut the top tier (assembled) and when then can get to it without tearing up the cake, to gently turn while pulling up to remove.   I then tell them they can disassemble the other tiers or cut assembled.   In your case with 3 different flavors, I would disassemble as soon as they could get to that center dowel and remove.

If she'd like to remove it immediately after transporting, you could leave the rod exposed about 4" by using one 4" taller than needed.
