I have a client that asked for chocolate ganche frosting..not buttercream. I have never made this before, and wondering if anyone has any recipes or suggestions. Thank you
I make whipped chocolate ganache all the time, it's wonderful.
8 ounces bittersweet chocolate
1 cup heavy cream
1 teaspoon vanilla
pinch salt
Following the recipe above make a ganache as you normall would, allow the mixture to cool to room temp, then with a hand mixer beat it...Air gets incorporated into the mixture and it fluffs up a bit so you can pipe it on like normal icing but is still, thick, rich and creamy like a normal ganache.
