Im going to start baking cakes on the side as a part time job. I've decided I'll be pricing my cakes by the person and then add on additional surcharges. What are some of the misc. items you may charge additional for...below are some examples I could think of.
if the customer want filling vs. icing....do u charge extra?
if the cake has 3 layers with all different flavors...do u charge extra?
if the cake has more then the 2 basic layers..do u charge for the additional layers?
Below are items i know I'll charge extra for...
if the cake is iced in buttercream vs fondant. The price per person will be different.
Different levels of fondant decorations...the more detail the higher the charge.
if the cake has figurines...then I was thinking about charging per figurine.

AIf an add-on involves higher ingredient costs and/or is more labor-intensive, charge more to cover those increased costs (don't forget your markup). If not, don't.

3 "tiers", not layers.
It's obvious if you charge per serving prices and additional layers would potentially serve more, it would cost more.
Most people charge extra for fondant, not the other way around... BC is typically "included" otherwise they'd unexpectedly get an uniced cake if they didn't pay extra.
It could be either one, we've sold cakes where different layers have different flavors (at an extra charge of course since it involves more labor).
Personally, I wouldn't charge extra for different flavors that don't cost me more, but like you said -- if it does, and if it involves more labor, then do. (It doesn't involve more labor for me.) I responded because it's more common for two flavors in a two layer cake than it would be for three flavors per tier (never heard of that unless for a rainbow layer cake). So, I assume the OP was referring to tiers rather than layers.
