It seems to me like butter-cream is the only "frosting," or at least the most popular, here in the US. I'm originally from Puerto Rico, and yes we do use butter-cream, but it is not the most popular frosting. I bake cakes as a hobby but I would love to start selling, so I'm just curious. The other day I made Italian meringue and when looking at different recipes I also found an Italian meringue butter-cream! I personally do not like butter-cream! Why is it so popular?
