What can I tell my friend who is making 4 cheesecakes for a wedding how to keep her crust from getting soggy when she thaws her cakes?They are currently in the pans in her freezer.

Why does she think they will get soggy? There should be enough butter in the crust to ward off any condensation/humidity..
if she wants a tip for future cakes, when I do wedding cheesecake, I bake the cake without a crust and then add the crust to the top of the pan before i flip the cake. this way i have a cake with a flat top and a flat bottom.
