First batch of homemade MMF.

Hi,

 

I just finished making my first batch of MMF (I used Elizabeth Marek's recipe and instructions).

 

Now that I'm done, I'd like to flavour it with vanilla (something I guess I should have done while I was making it, but...uh...didn't think of that...).

 

Can I just add clear vanilla extract to the fondant after it's made, or will I ruin it by adding the liquid?

I made this too today!  If you add vanilla, it probably would make it a bit sticky, but could possibly compensate with a bit of powdered sugar.  I tried it without adding any flavoring, as I wanted to try as the recipe is written.  Next time I probably will add a bit of flavoring while the MMs are liquidy.

I have flavored mine before (with mint extract), but I added the liquid to the melted marshmallows. Usually I don't bother though, the marshmallows already have vanilla flavor in them.

I also wanted to try the recipe as it was written, just to make sure I would be able to get it to turn out as expected, so I didn't want to add anything else.  Also, I had read that MMF would take on the taste of the marshmallows, so thought that would be sufficient.  I guess there's a reason I've never been a huge fan of marshmallows by themselves.  icon_smile.gif

 

I found it bit sweet and tasteless, so next time I think I will add some flavouring to the marshmallows by replacing some of the water with whatever I decide to use.

 

I'm really happy with the way it turned out, otherwise!  I rolled out a bit just to play with it, and tossed it around like a raw pizza crust, and it was awesome!  I usually use Satin Ice (buttercream flavour...yum), but have been experiencing a bit of elephant skin and tears, plus it's expensive, so gave this a go.  I'm glad I did!  I can't wait to actually use it on a cake!  icon_smile.gif

I have used this recipe from Elizabeth since I started making cakes. I was wondering though what is the taste difference between this recipe and Satin Ice fondant? I make toppers and Elizabeth's recipe is perfect for that but I don't really like the taste. Ive even used the Vanilla Butter Emulsion and I still don't really like it. Ive had others try it also and they too do not really like the taste. So that's why I was thinking about trying the Satin Ice fondant but didn't know what really was the taste difference.

I find Satin Ice quite tasty and not overly sweet.  I usually buy the Buttercream flavour, although I have bought pre-coloured fondant that was vanilla flavour, and it was not too bad, either, and I've had comments from others on the nice flavour of the fondant.

 

Unfortunately, I find this particular MMF really sweet, but without any real flavour.  But as it's the first time I've made MMF, I also don't know if other recipes taste better.  So I was hoping that if I added flavouring, it would improve it.  I'm going to get some clear vanilla and try it with a small bit of the batch I've made and see.

Thank you! That answers my question about the flavor. I also find this homemade MMF without taste and Im not sure what to use to make it better. I have tried the clear vanilla extract also but it did not make the taste much better.
