I've been asked to do a June wedding in KS. Uh, it's outside and could be 90 degrees! I've read about many disasters, but there's got to be a solution. Any thoughts? First the client wanted chocolate frosting, now I"m thinking fondant covered would be best. Could I still put chocolate underneath? What recipe for frosting. Mine has butter and I assume that is a no no for hot weather.
Hey Leannrr, it actually could be hotter than 90 in June! Look at what happened last year...Yes I am in Kansas too...Wish I knew what to tell you for sure....but I am with you thinking butter in your buttercream or chocolate buttercream would be a big no no. Just substitute with butter extract...I also agree that fondant would be the best way to coat this cake. I'm interested to see what the real pros post about this. I hope you get some good advice
Have done some more reading on site, and looks like majority says Indebi buttercream with dream whip. I had that saved to favorites, but don't think I have ever made. Maybe for "a time such as this!" I wonder about a chocolate version. From the sound of it, I may not need to cover in fondant. I don't want to make chocolate fondant, its so hard to get a good dark brown color. Store bought chocolate Satin Ice is good but so expensive. The client has already said, "whatever I need to do" so I may just make the outside of the cake white instead of chocolate. Hmmm... wish I knew all would be well. I have to travel about 30min + to get there too. Luckily, it will only be 3 tiered so I can take fully assembled.
