I'm making my daughter a castle cake for her first birthday. I made the cake a few weeks ago because I was baking my husband a cake and wanted to save time and energy (and not leave it to the last minute!). So, taking the advise from the cake decorating shop, i baked it and froze it, as is.

Now i'm not sure what to do. I still need to cut the layers, carve the shape and do the decorating.

When do i take the cake out of the freezer? does it need to thaw before I can cut it (its a 14 inch square cake)? just need some advice on the timing of everything. In the past I've just done it all in the couple of days before so never had issues with freezing, but rumour has it it is a popular and worthwhile exercise. help please!! icon_biggrin.gif

Many decoraters perfer to freeze their cakes before carving, so just take it out of the freezer with enough time to soften a little before working on it.
