Adding Tylose Powder to Fondant Questions!

Hello Everyone! I am making a princess cake this weekend and needed to use gum paste to create letters, numbers, and some tiaras. At the cake supply, the lady recommended me add tylose powder to fondant. But all the instruction she gave me was add a little bit and let it sit in the fridge over night. I have been trying to find some clearer instructions because I have seen different techniques being done. So I am wondering, do I add the 1 teaspoon of tylose to the 1lb of fondant, let it sit overnight in the fridge (or room temperature) and then work with it the next day, or do I mix the two then create my letters and tiaras and let those sit overnight. Mix it in & you'll feel it start to "change" as you work it in. I add a little at a time, work it in, add more. You can cut your letters right away & they'll harden on the counter overnight.

I wouldn't put it in the fridge hun.  Tylose/CMC will 'mature' pretty quickly anyway, and ajwonka is right .... as you knead it into the fondant it starts to feel more and more like plasticine or something ... if you stretch it, it will come apart and kind of 'snap' and 'pop' rather than just tear (you'll know what I mean once you do it lol !). I know I can be impatient, so I tend to work with mine straight away and THEN let it harden up - try and find a (not cold/humid/hot) dry place for your letters/structures to dry out - I've seen some cakers say that they put their flowers/models etc in an oven just with the oven light on and leave overnight, though I've never tried it !  Good luck with your castle xx
