AOkay, so I had an order to do a Marble cake that was due on Wednesday.... So I baked the cake Monday night, and then frosted and filled the cake with chocolate Ganache on Tuesday. On Tuesday night, the customer texted me to tell me that she wasn't going to get her pay-check until Thursday, so she was just going to pick up the cake on Friday, which is today! So I went ahead and covered and decorated the cake on Wednesday so I could just get it done. NOW she texted me and said that she has the flu, so she won't be able to pick up the cake until tomorrow....

The cake has been on the counter this whole time, but its been cold. My question is: will the cake still be good, or fresh, by tomorrow? How long does Ganache stay good at room temperature? I've tried looking for the answer myself, but some websites say 2-3 days, and others say a week or so. So I'm confused. What should I do??

unless i had held the cake in the freezer which stops the action better i'd be hesitant to give it out after almost a week of wishy washy customer stuff

but since it is her wishy washiness that got you here--it's probably fine

i mean what kind of cake and how long it can last are all things you know- i don't

if you think it's gonna be good or good enough--she deserves it

i mean she's been flaking out on you all week (even though i'm sorry she has the flu)

if the cake is still good give it to her

the leftovers probably won't last as long afterwards

but she used up her leftovers in advance this time

and besides that i'd really hate to do another cake for her

AYea I don't think I'd do another cake for her. This is just ridiculous. Should I tell her to eat it right away when I give it to her, or to be cautious or something? Or just don't even mention anything at all??? I don't want to get anyone sick.... Lol. And a late fee sounds good to me! Lol
