So Ive always used Special Dark for my chocolate cakes/brownies. I recently decided to try a higher end brand to see if Im missing out on something. So I purchased Cacao Barry Extra Brute. I used it in the same recipe. Blah. The chocolate flavor is not as strong, much more bland. However it did make the cake more fudgey in texture. Has anyone else tried a similar comparison and found the same results? Now Im stuck with the Extra Brute and not sure what to use it for. Was it just the cake recipe and maybe I should try another? It just seemed to have a better milk chocolate flavor than you would find from a natural cocoa, but not the dark chocolate flavor I get from the Special Dark.
