Hi Guys,

Is it ok to use cream cheese frosting underneath the fondant? what about whipped cream?

Thanks,

I find cream cheese frosting to be too soft to put under fondant.  I have never done whipped cream under fondant but in my opinion it would not be a good choice. I don't think it would be stable enough to support the fondant on a cake.

AI just learned the hard way but it was challenging to cover a cream cheese frosting - covered cake. The frosting and fondant stuck immediately, so I couldn't even re-adjust the fondant. Next time, I would fill the cake with cream cheese frosting and crumb coat with buttercream. I agree with savannahquinn regarding whipped cream... Not stable enough.

I just started using cream cheese icing under fondant. I was always concerned about food safety. I was directed to the cream cheese icing on the Texas Cottage Food Law page, I tried this on my last cake and it worked wonderfully!

I did add additional powdered sugar to make it more of a butter cream and not a glossy cream cheese icing.

This is the recipe
