Wedding Cake Dilemma !

I have promised to make a friends wedding cake (sponge) this year....but when she told me the date (just booked) I realised I was on holiday.

 

I am very new to cake decorating......she wants a 3 tier sponge iced with sugar paste.....can I make this 2 weeks before (her wedding is on the last day of my holiday which I am coming back a day early for!)

 

Will it survive - the cake and the sugar paste and flower paste decor if I make it two weeks before???  if not any suggestions other than cancelling my holiday ha ha

ADoes this mean you will be on Holiday when it's time to deliver/set up?

Best to be honest with her.

I agree with Delicious Desserts hun ... She's your friend, I'm sure she would rather have your honesty if you feel like you will be giving her a rush job because you're only going to have 1 day to do it all, and think about the pressure you may be putting on yourself.  If you do decide to go ahead it might be worth making a trial-run cake and freezing it for a fortnight and seeing how well it defrosts ... your decorations can be made in advance for sure, at least you know they will have hardened (use petal paste or add gum tragacanth to your sugar paste, but DON'T store them in an airtight container ... a card cake box is always good.  I hope you CAN find a way lovely, it's always fab to make something so special xx

I have frozen fully decorated, stacked buttercream cakes, a couple times, when I had a cancellation and party date moved. If you have a place to put it, it would work out, but not on the counter!

 

Colors can run, but if it is all white, it would be fine. I would stack, and decorate, put it in a moving box, and freeze it. Then have someone take it out of the freezer the day before and set it on the counter. Leave it in the box to thaw. Just, where would you put it?

 

I suppose you could decorate and add the supports, then freeze each one in a box separately, and then have someone take them out, stack them with a bit of fresh buttercream or double sided tape,(depending on what sort of supports are used) then put into the larger the large box to thaw....

 

It CAN be done, but whether it SHOULD be done, is another question ;-)
