I have asked to do vegan three tier fruit cake for a wedding,this would include decorating in fondant .

can any tell me how to go about this as I usually put butter cream  crumb coat under the fondant and how do I create a fruit cake with out eggs or butter?   any help would be greatly appreciated.

Buttercream does not go with fruitcake.
 
Sugarpaste is attached to fruitcake with boiled jam.
 
3 tiers is a lot of fruitcake which is served in 1" x 1" fingers. An 8" plus 10" square will provide 164 portions.
 
This cake serves 64 people
 
Super Simple Fruit Cake
1 kg mixed fruit
2 c liquid *
3-7 oz g dairy-free chocolate, melted **
10 oz self raising flour***
Select any dried fruits - limit the amount of glacee or candied fruits - golden and dark raisins, currants, dates, prunes, apricots, cranberries etc chopped small.
Soak the fruits in the liquid - covered - 2-12 hours.
Add the flour bit by bit - do not dump all at once.
Lined 8" square pan. 
Cover cake & bake 325°F 2 hrs, remove cover in the last 15 mins
 
Variations:
* strong coffee, flavoured tea, any juice, either plain or flavoured rice, soy, nut or coconut milk, or just water. You can replace 1/4 - 1/3 cup with any alcohol
** replace the chocolate with 2 1/2 tablespoons cocoa powder
*** Approximately 2 1/3 cups all purpose flour with 3 teaspoons baking powder plus 1/2 teaspoon salt. or substitute 1/4 cup flour with almond or hazelnut meal. 
 
Optional
1 ts powdered ginger, 1 ts cinnamon plus 1 ts pumpkin pie or apple pie spices
