I had some wedding cakes frozen and I've taken them out to thaw. The 14" square was still frozen when I stacked it on top of the other. I put icing between the layers. I did this deliberately because I've had problems in the past flipping one on top of the other and it cracked. With the cake frozen, it was very easy to do.

Now here's the question, can I go ahead and crumb coat the cake with buttercream icing? I don't want it dry out. I've frozen cakes before and thawed completely before putting icing on them. Was just wondering what would happen if I crumb coated and it was still semi-frozen.

Anyone know?

I've crumb-coated frozen cakes before without a problem. It does help to keep them from drying out, since they're already unwrapped. You will have to give it time, though, because once it's iced and it thaws, you will have condensation. Just let it sit and it will dry just fine, ready for your top coat!

This is really interesting information....sounds like timesaving tricks to me. A question I have is concerning crumb-coating. Do you just do the sides where the layers fit together...or are you covering the entire cake? I've just done the "crack".

Phoov - I do the whole cake and let it crust... it really helps keep the crumbs out of the top layer, particularly if you have a very dark or crumbly cake. A very thin coat will do it, just to seal the surface.

Thanks Steph...I think I'll start doing this. And while I have you - I saw some Royal Icing butterflies on one of your cakes. Are the wings a close cornelli lace effect, or did you use a pattern? They are gorgeous and I want to do some. Is the body royal icing also? (Sorry for changing the subject!) ~Patricia

I crumb coated once while the cakes were still partially frozen....but I didn't let it sit long enough between the crumb coat and top coat to let the condensation occur and then dry. It was a mess....the top coat started sliding off after I was finished!!! icon_surprised.gificon_mad.gif I guess the condensation just didn't start until after the top coat was on and when it did the icing just separated itself from the crumb coat because of the water between them?
