Need A Pineapple Cake Recipe

One of my brides has requested a 8" round pineapple birthday cake for her fiance.  She said he loves pineapple cream cake.  I asked her if it had nuts or coconut in it.  No.  Is it a sheet cake.  No.  She says it has pineapple in the cake and also in the filling.  I have searched until I am about to explode.  Can anyone help me find a recipe?

I found and used this recipe recently.  It has chunks of pineapple in it, which is what my friend wanted for her pineapple cake.  I used a coconut filling with it.  Hope this helps.

I saw this recipe.  Looked yummy.  Kind of expensive since a pineapple is around 4 bucks here and vanilla beans are off the chart.  I really would like to impress them though.  She has showers coming up and did not book the grooms cake yet.  Did the cake turn out good?

I actually made it with canned pineapple, couldn't find a fresh one.  I typically use a little bit of vanilla bean paste in place of the seeds from a vanilla bean, much cheaper if you can find it. 

 

I was pleased with the cake.  It did take longer to cook and the top was not flat, I think since it had pineapple in it, but I just leveled off the top and it tasted great.  It is a slightly more dense cake just so you know.

Thank you.  I have vanilla bean paste and canned pineapple.  Will give it a go and let you know my thoughts.
