I am making a wedding cake but have never made one without alcohol in before!  How do I keep it moist and how long would I need to make it before the event?  Anyone have a tried and tested recipe?

I have not seen any recipe without using sherry, brandy or rum on a fruit cake, the alcohol from I know is not only to enhance taste but it helps to protect cake from getting moldy. You might want to try Cherry and Almond Cake, and Date Cake. Good luckthumbs_up.gif

You can use a fruit syrup if you must avoid alcohol.   It needs to have 1/2 cup of sugar for every cup of juice/water/tea. Simmer and use after the cake has baked and cooled competely.  Give the cake 2 doses of this syrup one week apart and serve the cake within a month.

 

You should also look up/borrow from a public library any recent Alan Dunn book because he has a recipe for a very moist fruitcake without any alcohol that can be baked just a week before the event.

I have made many fruit cakes with out alcohol,I use 100% grape juice  or non-alcoholic wine.

AYou can use hot coffee, chocolate milk or orange juice. Between myself and my mum we have tried all of these instead of alcohol and they work quiet well. The coffee sits with the fruit until it's cool the others sit overnight with the fruit the milk obviously in the fridge. :)

Soak the fruit in cold black tea.

 

Or orange juice.

 

There's no need to 'feed' the cake after it's baked.

AHi there Again on the topic of making a fruit cake without alcohol..... will tins cake last for a year out of the fridge? I have a client who wants a fruit cake to be preserved until her 1st Year anniversary and it will be on display until then.what to do .? Recipe anyone .?

I would just say no! The cake will mold. She needs to store it in her freezer if she wants it until her first anniversary.
