Hi everyone. I'm doing a tasting in a couple of weeks. It's for a 3 tier wedding cake for 130 people. Just wanted to know if it would be alright to simply serve mini cupcakes for tasting? Any thoughts and suggestions would be much appreciated.

Is your cupcake recipe the same as your cake recipe? If so it should be OK, if not you may want to serve a small unfrosted round cake with different frosting options on the side.

If they are going to be minis, make sure to not over bake in the least, and keep them covered until the tasting. I don't enjoy minis because they dry instantly, and there is so much chewy crust compared to soft inner cake, that I don't think they have good flavor.
I bake 8" squares of cake, cut one side of the crust off, and then freeze them. When it is time for a tasting, I cut a 4" by 1" strip off, then cut it into slivers. I put filling in little cups and let them mix and match. (I also give the "heel" or end piece to my husband, who will eat anything)

I would rather make 1 cake for $150, than 3 for $50 each.
