Do stencils work on straight cookie or does it need flooded background?

O.K. 2 questions in a row because I am busy at work trying to juggle Valentine's day-14th and paczki day ( special doughnuts for mardi gras) on the 12th--we do thousands of dozen for that day.

 

So tried to use stencil on heart cookies and it just wasn't working well.  Was applying to a baked red dough cookie with no flooded or iced background... just bare cookie.  I wasn't pleased with it at all.

Do most of you always ice a cookie and then use stencil?  Maybe my royal icing ( just made) wasn't good or too stiff to use. 

 

Would appreciate any info from what you have done.  After decorating over a thousand cookies for christmas I'd much rather use stencils to whip up Valentine cookies.

Yes, ice first, then stencil. Since you have so many, why don't you use a poured fondant? You can put them on a cookie grid, on a cookie sheet and after they are done dripping, scrape up the excess and use it again. After they set, the stencil will work great. You can also use a sponge brush with coloring on it and a couple drips of water, and pounce it over the stencil. It dries in a flash, but is one dimensional.

Please try a few cookies with softer royal icing--add more egg white and beat at low speed. 

Since you coloured the dough, the white should show up very well.

thanks so much for advice... will try changing royal icing and see if that helps.  Never thought of pouring my icing... will really help with the amount of cookies.  only half done with background icing so will do that tomorrow.
