Hi to all you lovely cake makers I'm new to this scene as I normally make cookies but I really want to start decorating cakes, I was wondering what the best sponge cake recipe is please I don't want to use packet mix, unless this is better ? Little advice please would be much appreciated thank u xxx

Basic sponge cake

There are people on these boards that know a lot more than me, but I would not recommend sponge cake for any type of elaborate decorations and especially not for fondant covered cakes. It's too delicate. It's much easier to decorate a heavier cake such as a pound cake type cake or a 1-2-3-4 type of cake.
For me, sponge cake is best for Tres Leches, plain whipped cream, fresh fruit and fruit compotes.
