Hello all! My grandmothers birthday is coming up and our whole family is taking her out to eat and they want me to make the cake. My grandmother is a wonderful baker and can make the best cakes, so I am wanting something that is delicious! My grandmother likes my pound cake so I am thinking of baking a pound cake and icing it with swiss meringue buttercream and topping the top with cut up strawberries and strawberry glaze. Does this combo sound good? I have never had pound cake with swiss meringue and strawberries before. Do yall think the swiss meringue would hold up to the strawberries and glaze on top?

Poundcake is very rich, and the strawberries/glaze will be an excellent complement.  Make LOTS of berries because people will ask for seconds.

 

I don't know about the meringue buttercream.  I don't usually ice poundcake--when it is baked in a fancy pan, it gets some powdered sugar or a light lemon-juice-sugar glaze.

 

If you want to decorate a cake, maybe try a cream cheese icing?

Cream cheese icing is out my grandmother doesnt like it. I thought since the pound cake was rich and the strawberries and glaze is rich the swiss meringue icing would be better than the overly sweet american buttercream since the swiss isnt as sweet. I am planning on making a 9x13 double layer cake as I need lots of servings because I have  a large family and I want there to be enough for people to take some home if they want. Thanks for the help ;)

Maybe try a white chocolate ganache?  Also not too sweet.

 

In my family a 9 x 13 x 4 cake would serve about 30 dessert-loving people (no leftovers).

AI would do something a little lighter than a poundcake if you are going to ice it with a meringue buttercream. Or you could just make a large batch of stabilized whipped cream and use that to ice the cake. That would also go well with fresh fruit.

AI do pound cake with buttercream all the time! It's one of my most popular summer flavors... Pound cake with white chocolate mousse & fresh berries. Most admit mine is reg old buttercream not Swiss.

Ganache is a mixture of chocolate and heavy cream, and sometimes it can have butter or liqueurs/flavorings added.  It's basically the stuff used to make truffles.  You can use it while it's still liquid and pour it, or you can use it like regular icing when it firms up.
