How long in advance can I bake

I was wondering whether anyone can give me some advice?

I have been asked to make a football pitch cake the customer wants to pick the cake up on wednesday but they arent wanting to eat the cake/ cut the cake until the saturday.

Can the customer freeze it?

She can't freeze it cos the cake will be decorated with fondant etc
