I know this seems to be the ultimate question, but does does anyone have a really wonderful white cake recipe? I'm making a two tiered funfetti cake for my soon-to-be nephew's baby shower that will be covered in fondant. It seems like the repeating problem I have with covering cakes in fondant is that since the fondant acts almost like a plastic wrap, my cakes end up too moist and dense (for my tastes anyways, it doesn't seem to bother anyone else). I'm trying to find a somewhat sturdy white cake that isn't going to be so dense and moist that it's almost hard to swallow without chasing it with milk! :) I've got three cakes due within a week and a half on top of my full time job, so I really have one shot in making a great cake that works!
