AYou might also check out the Advanced Fondant course on Craftsy, a lot of the techniques on this cake are covered in this class.
I've done open lids with a single layer covered in fondant. Is it possible these lids are styrofoam covered in fondant for greater stability?

I've done more of these than I can count. And yes, that's the best thing to use because it's the lightest. To OP, it also helps to put 2-3 dowels in to hold up the lid and a "smoosh of fondant with a little tylose glue or even water to secure it. If you don't dowel it, the weight of the lid can squish the cake down and cause the fondant to ripple.
