Wedding Cake Recipe Help...

Hi Guys,

 

My brother has asked me to make his wedding cake which is amazing. The bride's requirements are 5 tiers and all sponge. I've told her that at least the base tier will have to be a fruit cake because of the weight.

I just don't know what scratch recipes to use. Any scratch recipes will be greatly appreciated especially if they're in grams/ounces rather than cups...

Will i need another tier to be a fruit cake?

The bottom tier doesn't have to be fruit cake.  If you stack the cake properly you can make any cake you want.  The support system is what holds the cake up, not the cake itself.  Now I know fruit cake is still popular for weddings in the UK, but if she wants all sponge then it's all sponge for her!  Some of the older folks might be expecting fruit cake though, so you might want to mention it to her since you are family.

 

Here is a recipe for a Victoria sponge.  It has really high ratings.  I have never made one but that's the first thing that came to mind.
