blue velvet cake

the recipe calls for blue "gel paste food color" but I have blue "icing color". is this the same thing/or similar or do I have to buy the paste?

If you have liquid, then that's not the right thing to use.  You can use it but you need to use more than what the recipe calls for.  Pastes are more concentrated so you use less.

ok thanks. i use the liquid when i make red velvet cakes and it comes out great. would it be a big difference/not come out right if i used liquid for the blue velvet?

It normally takes 1 oz. of food coloring to color the cake so, if you have 1 oz of blue then it will work. Post a pict of your cake when you are done.

When I used to work years ago (retired now) we had a lady who made red velvet cakes during Christmas time. She made one layer of red, one layer of green so it would be Christmas colors. She had 4 layers like that. We all looked forwards to her cake every year!! I really loved the cream cheese icing and she also put walnut pieces into icing once she finished icing the cake.

thanks alot. i had .25 oz of blue food coloring so i mixed it with blue icing color and my fingers are crossed...

Help! icon_cry.gifDoes anyone have a blue velvet recipe that would stand up to carving? I have a cake due in July and I am nervous about sculpting a blue velvet cake.
