AHi I am wanting to make a bust ( head, shoulders and upper torso) entirely from cake including the head and face so need a really dense cake. What do I add to a media cake recipes to get this. The size will be 8 x 8 square. Many thanks for any help.

Have you considered using a pound cake recipe?  That's what I have used for my carving attempts!  I'm interested to see what others say!

I use mud cake for carving and sculpting , it can even be smooshed together in some place to build out features etc. A covering of ganache kinda cements it all in place as well and gives a smooth surface to cover.

I just re read your question, I would consider adding some melted chocolate to your cake recipe to make it denser.
