carrot cake cupcakes.. HELP!!

I have tried 2 different recipes for carrot cake and tried to make cupcakes with them.. they both flopped!! Help!! Does anyone have a recipe for carrot cake cupcakes ... I have someone who wants them for a wedding in July so I need to get something figured out. I have no clue what is going wrong with them or why I cant seem to make them. Thanks :) Deb

What are they doing? Caving in the middle? If so, the same thing happened to me with 2 different recipes also. I bake from scratch, and followed the recipe to a T, but both times this happened. I actually posted on here, and got several suggestions. You should find the post and print out all the suggestions. I have more to make tomorrow and if you want will let you know how these turn out.

I sometimes use WASC replace the white mix for carrot cake. I also just use three whole eggs and only vanilla beans/extract. HTH

Yes they are caving in the middle and they overflow over the top of the cupcake liner and Im not filling them any fuller than I do my reg ones.. I too am using recipes from scratch and following them to a T also.. I will try to find your post and read the suggestions. Thanks :)

that would be great if you let me know how yours turn out :) I printed off the suggestions from the thread you posted about these too so hopefully that will also help me. I might try again friday lol. Thanks so much and good luck with yours tomorrow

I use this recipe all of the time for cupcakes and they always come out awesome. Fair warning, you get about four dozen from this recipe. Good luck!

Not every cake recipe is suitable for cupcakes.

 

I'm sure you could halve or even quarter the recipe above, but you might have to adjust your leavenings.

I took Sprinkles' strawberry cupcake recipe (which I love) and replaced strawberry with shredded carrots. Yum!

This is the recipe I use for my carrot cake cupcakes (can also be used for cake) and people usually fight over them!  I omit the pecans as many people don't like them (though I think it's better with them!)

I used buttercream inside the cakes and "sacrificed" a few cupcakes I'd over cooked on the first trial.
