Hi All! Is it possible to flavor chocolate ganache? I would like to make a raspberry chocolate ganache for my daughter's birthday. If so, what do I use and how much? I have no idea. I'm new at fillings and flavorings. Thank you for any help.

I use this recipe for ganache and you can incorporate flavor into it. I would use a few drops of raspberry candy oil so it doesn't affect the consistency of your ganache.

Yes you can flavour ganache.

 

Use a high quality natural flavour/extract if you can.  Boyajian raspberry flavour is absolutely divine with dark chocolate ganache. Try 1/2 teaspoon per cup of cream.  If you can't get natural, use LorAnn candy flavours, they are also high quality and you need only a few drops per cup of cream. It works best to add the flavour right after you add the boiling cream onto the cold chocolate.

 

Whole Foods used to carry Boyajian--haven't been there for ages so doin;t know current stock.  Boyajian sells online to US addresses from www.boyajianinc.com and their products are the very best you can find.

 

You can also add spices, ground nuts, grated citrus peel--best added to the cream before heating it to allow the flavours to be extracted.

Another way to add flavours to ganache is to use different flavoured teas , you steep them in the cream as you heat it up .   Herbal or flavoured teas are ideal

I have used CK Icing Fruit with white chocolate ganache and it is fabulous!   I just threw in a couple of spoonsful on a whim and loved the result.  (CK Icing Fruits are my new Favorite Things.)

 

I have a lot of frozen dark chocolate ganache in the freezer and will experiment with other CK Icing Fruit flavors when I get around to using the ganache.   Since the CK Icing Fruit has very little liquid and a LOT of fruit flavor, it caused very little change in the the consistency of the white chocolate ganache.
