Cake pop/candy melt help please!

Hi everyone! My sons birthday is coming up and all he wants is cake pops! Cake pops at school, for his family party and his friend party! I'm in over my head!! But anyways, I went to Michaels yesterday with my soon to be 6 year old and he picked out all the colors he wanted, no problem! But today for some reason I just started to read the back of the bag. (This isn't the first time I've used candy melts and I have read the back before). And what do I see "Made on equipment that also processes peanuts"!! Really? Why have I never noticed this? So now here I am with 12 bags of candy melts that I can't use due to peanut allergy in his school. (Ill be able to keep for around the house because we don't have allergies). But now what? I just spent $50-$60 on candy melts!

So I know I can use regular chocolate to do the cake pops but what is the best kind? And I'm going to want to start with a white chocolate since we have a color scheme for his party! How does white chocolate handle gel food coloring? Can anyone give me some advice here please?! Anything is appreciated!!

For coloring chocolate, you need to use oil-based colors, not the "regular" gel.

 

Merckens and Guittard are both good brands of chocolate.

Thanks! I've never actually looked at them but Michaels has Wilton candy coloring, is that oil based/what I should get?
