I been ask to make a 2 tier cake with strawberry cream cheese filling covrd with mmf... event is tomorro. Would i have to put it in the fridge since its cream cheese? ive never done this before, have seen the outcome wen it comes out sticky n sweaty.. have any suggestions?... and also wudnt the cream cheese become hard? i wud appreciate any help.... btw pik up for cake is at 11 am tomorro

yes this filling sounds like it must be kept cold

 

the cream cheese should not get hard--you are making icing out of it right?

 

i can't tell yah about the mmf if it will sweat or not--sometimes it does and sometimes it doesn't

 

the weather and your type of frige has a lot to do with it

 

what kind of color you might use on the mmf

 

lots of variables

 

try to ease into the run up to room temperature

 

not a really shocking temperature change should help at least

 

but yes that filling sounds highly perishable

 

for going forward maybe avoid combining these two unless you have a great time with it this time

for example if you can box the cake and seal it in

 

that will help insulate it some from extreme temperature changes

 

because as you know sometimes just from the frig to the table top is enough to cause problems

 

so maybe think 'climate controlled' for a good/better result
