I have been asked to make a wedding cake for a friend and although I feel fairly confident as far as decorating goes I want to make sure I get the best quality ingredients that I can - does anyone have any suggestions as to where I can buy top quality dried fruit at a reasonable price? Also,does anyone have any favourite recipes for Summer wedding cakes? I live in the North of England

Dried raisins, sultanas, damsons, currants are more or less the same. They all need to be washed in hot water and dried on a dish towel the day before you start baking.
For candied lemon and orange peels, you will have the very best by making the candied peel yourself. It is very easy and now is the season for the navel oranges and thick skinned lemons

For pineapple, I used the dried rings, chop them up, and soak them in rum for a few weeks. Dried apricots, dried pears, dried peaches need only an overnight soak.
For cherries, I use dried but they do not look the same as glaceed. Sorry, I can't recommend any source
For a wonderful summer fruitcake recipe, look at any recent Alan Dunn sugarcraft book (borrow one if necessary) as he has a lighter fruitcake with white chocolate mixed in.
