I was looking under recipes and I don't see one that has been specified as a good recipe for a carved cake. I have my son's bday this weekend and am attempting a shark and need something that can be carved well and hold up. Help! lol I read on one of the forums to look for a "durable" cake but I don't see anything
I'd suggest a madeira cake recipe, its equal weights of butter sugar eggs and self raising flour then a half amount of plain flour;
for an 8" round I usually do 10oz of each- that's 4-5 eggs and 5oz plain flour :)
oven at 150C for about and hour and a half.
let it cool then put it in the fridge over night and it'll be really easy to carve.
You should be able to scale that easily enough to whatever pan you'll be using if not an 8" :)

You can carve a Victoria sponge too, if you chill it overnight. Use buttercream or ganache instead of jam between the cakes.
A "durable" cake requires more dowels to support any detailis, that's the only difference.
