How Early Can I Bake A Cake For A Party On Saturday?

AI'm doing a cake for a party on Saturday and I don't want to be doing everything the same day. How early can I bake the cake?

I am not a proffessional, just a hobby baker, but I am doing a cake this week for Friday. I baked the cakes on Monday night and Tuesday morning and wrapped them well and popped them in the freezer. I made the fillings and frostings on Wednesday. I torted and filled one before work today and will do the other tonight after I get off of work. I will then put it all together in the morning and frost it. I work full time at a 2nd shift job, so I can't usually do it all in one day. That is just my thing. Others may have another take on it.

If I have something for Saturday I will usually bake on Wednesday, unless it's a bigger more complicated cake, then I will bake on Tuesday. As long as you wrap them before filling and icing so they don't go stale you will be fine!

sometimes real fresh cake does not slice well

 

it can crumble

 

i like to 'season' my cakes in the freezer too

If the party is on a Saturday-

 

I will usually bake all my cakes Sunday (I have a full time day job) I will wrap them VERY well with plastic wrap and stick them in the freezer

 

Then usually Thursday night- I will make fillings and icings and store them in fridge or at room temp

Then Friday I will assemble and finish the cake if the design is simple.

Saturday morning- if I didn't finish something from Friday night, Ill get up early and finish the cake or do last minute touch ups

AI too bake my cakes on sunday, wrap well and freeze. Freezing a cake makes it moist ...I take the cake out on thursday and let it come to room temp. I ice the cake on friday and put in frig overnight

When you take out your cake on Thursday, do you let it thaw a bit before icing, or do you just ice it like that when its frozen?

i ice mine frozen--if my icing seizes up from the cold i just set it aside

 

or take a ten minute break and continue

 

but there as many different pathways to do this as there are cakers on the board here

 

just about
