I have been researching the difference in store bought fondant and have mixed feelings. What are the pros and cons of Duff, Wilton, Fondarific, Satin Ice... or others I don't even know about????

Duff and Fondariffic are pretty similar.  Both are very soft and do not dry out much when left out.  Fondariffic is especially long drying.  I have rolled it out SUPER thin and left it out overnight to put through an electronic cutter and am able to still knead and use the leftovers, which is shocking if you aren't used to it.  Satin Ice dries out very fast in comparison and I find that you get hairline cracks at the edges because of that.  Wilton has an interesting texture.  I liken it to an AirHead candy... very taffy-like.

Of all of those choices I would pick Satin Ice.  I use Fondx, but not the elite line... just the original formula.  I love it.  I find it to be a good mix of dry time and workability.  It is easy to knead but not too stretchy like Fondariffic.
